Tasty Garbanzo and Red Kidney Beans (5 minute recipe)

Here is a super quick recipe.
Tbsp = Tablespoon
Tsp = Teaspoon

Can of Garbanzo beans
Can of Red Kidney beans
Can of Rotel diced tomatoes
Picante sauce 2 Tbsp
1 Dry Enchilada Seasoning Pack*
1 Dry Taco Seasoning Pack*
Olive Oil 1 Tbsp
Cilantro (Garnish)
Yogurt or Sour Cream (Topping)

*Make sure you buy the vegetarian kind without gelatin, beef or other animal products!

  • Heat up the Olive oil in a skillet and saute the beans for two minutes on low heat. Turn off heat or put on low.
  • Add the dry seasonings, Picante sauce and the can of Rotel and stir.
  • You can squeeze half a lime for taste if you like and a pinch of salt won't hurt it either.

Eat with tortillas or rice. I had this dish with two low-carb tortillas tonight. Quite yummy :)
